Grilled Brie and Tomato Sandwiches




What could make a food blogger not cook for, oh, about 2 months you ask? Well a 3 hour commute (each way) to San Francisco, not once but twice a week, for 7 weeks. (My work with UCSF has finally wrapped up and we're in the data-collection stage. Fingers crossed that we all continue to find out how amazing yoga is!)

 And just when I thought it was over, I was hit by 3 long weeks of illness.

Hi. I'm Candice and I've been living on god-knows-what while I crawl out of the deep dark pit that is influenza. But now that particular baddy has made its way through all five members of my family, we're all happy and healthy again, and I finally, finally,  got back in my kitchen.

For the kids, I dished up brie and apple grilled sandwiches, but for us, we got the good stuff. It's not particularly fancy, but like yoga, when you've been out of practice for a while, the simpler things are the best things.

You'll need:

I loaf of ciabatta bread, halved lengthwise
1 tomato, sliced
spinach
sliced double-cream brie
spicy mustard
salt and pepper to taste

Spray a cast-iron skillet with oil, and get it nice and hot. Then reduce heat to medium.

Meanwhile, assemble your sammies by spreading on the mustard, then topping with tomato, brie and spinach. Sprinkle salt and pepper to taste. Grill on each side until the cheese is melty and enjoy with a nice fresh salad!

Open Faced Avocado Melts




The lady at Trader Joe's who samples cheeses could be my most favoritest person ever. Somehow she not only manages to convince my husband to buy delicious artisan cheeses, but advises him on how to use them. Which makes me about as excited as children on rollerskates.



Take for instance this little beauty, a combination of delicious ingredients, brought to you by none other than my husband, via the sweet little genius at TJ's.

We used a rustic olive baguette and a dijon cheese, but any cheese will work and you can add dijon mustard right on top.

Ingredients:

1 baguette, cut into slices
spinach
sliced tomato
sliced avocado
cheese of your choice
dijon mustard
olive oil
balsamic vinegar

Brush your bread slices with olive oil and vinegar, then top with spinach, tomato and avocado. Top the whole thing off with dijon mustard and finally sliced cheese. Broil until melty and slightly browned on top and eat with a knife and a fork.

Spinach Patties


I've been using our new chalkboard table to begin teaching my children about yoga philosophy. Each day I use one simple lesson. I figure the 8 limbs of yoga is an age-appropriate place to start.

Today's lesson on Satya seemed well-timed, as Cole came home from camp with complaints from his counselors of not following directions. We talked about how being thoughtful of others might come to play in his behavior at school and how he could be more respectful.




You may have noticed that I don't have many, if any, homemade burger recipes here. True, I have made a few batches over the years, but I haven't really found the perfect burger recipe. So many times they are too dry and crumbly, or they stick and fall apart when cooking, or they stay too mushy on the inside. Until today.

The secret ingredient? Masa flour. Masa is the cornmeal flour used to make tamales and unlike flour, it expands when cooked and stays dense. The result is a burger that is hearty and dense, not crumbly and not soggy. I may just use masa in all my burgers from here on out!

Ingredients:
1 large bag of fresh spinach, chopped (about 6 cups)
2 eggs
1/2 cup masa flour
1 tsp each salt and pepper
1 jalapeno, minced
1 green onion, minced
3 cloves of garlic, minced
1/2 tsp red pepper flakes
1/4 of a diced onion
1 cup of shredded cheese

Bring to boil a large pot of clear water. Pour the fresh spinach into the pot and cook for one minute. Then drain in a large strainer and rinse with cold water. When cool enough to touch, press and squeeze as much water out of the spinach as you can. Transfer the spinach to a large bowl.


Add to the spinach the rest of the ingredients, mixing well with a spoon, and/or your hands. Form into four patties and cook over medium heat about 5 minutes per side, or until cooked through. (I like using a seasoned cast iron skillet, as it uses less oil than our stainless steel skillet).


Serve with your favorite sauce and burger fixings. We used a vegetarian Caesar dressing that paired nicely. The next day we had the leftovers with mayo, a stoneground mustard, shredded cabbage and pepperoncinis. Even better.

Pasta e Fagioli: A Poor Man's Meal


I'm excited to announce that the Yogic Kitchen will be featuring recipes from guest yoga teachers! Today's recipe comes via guest blogger Cori Fratelli, a yoga teacher and mom from Colorado.

Cori Says:

While it may have seemed, at the time,  like my parents could afford the many luxuries of life, looking back I recall many hardships and I make the conclusion that my parents perhaps lived from paycheck to paycheck, like so many of the American population currently do. Time and again....well more specifically, several times a week, my father would cook us "the poor man's meal," as he called it. In my Italian neighborhood growing up, we called this dish Pasta e Fagioli, or pasta and beans. Today I make this meal for my family, and I recall my loving  father standing over the stove cooking this very same scrumptious meal for his family.

Ingredients:

1 clove of garlic, chopped
1 Tbsp. olive oil,
2 cups fresh spinach
1/4 of a red onion, sliced
1 can white beans, such as Great Northern or cannellini
1 box spaghetti

Cook it up

Cook pasta according to directions on package.

Meanwhile, saute the garlic until fragrant. Add the spinach, onion and cook until the spinach wilts. Add the beans and heat through. Finally, drain the spaghetti and toss with the spinach mixture, cook another 2 minutes.  Add in more olive oil, salt and pepper to taste. Enjoy!

Go-To Veggie Sandwich



When I first became a vegetarian, some 10 years ago, I used to eat these all the time. Not sure why I got out of the habit, maybe because I'm not a huge sandwich eater to start with, but having one today brought back all kinds of memories.

The only thing I wish I had added (but didn't have on hand) was maybe some red onion or peppercinis.

Ingredients:

2 slices of whole grain bread
handful each of pea shoots and fresh spinach
1/2 of an avocado, sliced
1 small tomato, sliced
1 block of marinated, baked tofu, sliced (you can buy pre-packaged or make your own)
3-4 slices of cucumber
honey mustard dressing

Slather each slice of bread generously (trust me on this, be generous!) Top one slice with pea shoots, spinach and cucumber. Top the other slice with marinated tofu, tomato and avocado. Season with salt and pepper if desired and gracefully bring the two slices together. Be careful, those avocado slices are slippery little suckers and will try to escape!

Latkes and Broccoli Spinach Soup


Latkes aren't just for Hannukah! I topped mine with the leftover ginger/carrot slaw from lunch (see previous post) but the traditional way is to serve it with applesauce or sour cream.


Paired with a nice green soup, this dinner is savory and satisfying and packs a whollop of veggies into one meal.

Latkes:

1 egg, beaten
1/4 tsp baking powder
1 tsp flour
1/4 pepper
1 tsp salt
1 onion
4 small potatoes
1 zucchini

Combine egg, flour, baking powder, salt and pepper in a bowl.

Grate the onion and add to the egg mix.

Grate potatoes and zucchini into a separate bowl. Turn contents out into a dry, clean dishtowel and squeeze the moisture out of the potatoes.

Combine potatoes to egg/onion mix and toss to coat.

Heat about 1/2 cup of oil in a large skillet (make sure it is nice and hot before you add the latkes, or they will stick).  Form each latke by taking a small handful and pressing into pancake shapes about 2 inches in diameter and about 1/4 inch thick. Brown on each side.

Keep warm on a dry cookie sheet in 200 degree oven until ready to eat.


Broccoli Spinach Soup:

1 clove garlic, crushed
1 onion, diced
1 head of broccoli, chopped
2 cups of broth or water
1 tsp salt
1/2 tsp pepper
3/4 cup spinach
1 cup shredded cheddar cheese (optional)
1 tbsp flour

Heat 1 tbsp olive oil in a medium saucepan.

Saute the onion and garlic until fragrant, about 4 minutes. Add in the broth, broccoli, salt and pepper and bring to a gentle boil.Continue to cook until the broccoli is tender and bright green, about 5 minutes.

Carefully transfer the soup into a blender and mix until smooth with the fresh spinach.

Place back in saucepan and bring back to a simmer.

In another bowl, add 1/4 cup cold water and the flour and whisk until smooth. Add to saucepan. Slowly whisk in the cheese (if using) and bring to a simmer, stirring constantly. Enjoy warm.

Vegan Detox Salad with Ginger Carrot Slaw


Holidays got you feeling a little sluggish? This salad is vegan and salt free (aside from what's in the miso) but doesn't lack for flavor! So give your digestion a little fiber and nutrient boost, guilt free. Remember, oil is not the enemy as long as it is a high quality oil like olive, coconut, avocado or sesame. Oils help lubricate your digestive system, cleanse the liver and keep the skin healthy.

Toss together a giant salad of your favorite mixin's. I used spinach, green beans and tomatoes, but use what you like!

The dressing is what makes it really special.

Slaw Dressing:

1 carrot, roughly chopped
2 inch section of cucumber, roughly chopped
2 inch peeled section of fresh ginger
1 tsp miso paste
2 tbsp rice wine vinegar
2 green onions, chopped
1 tbsp toasted sesame oil
about 2 tbsp olive oil
2 tbsp water

Finely chop your vegetables in the food processor. Add in the miso and the rest of the liquid ingredients and process until finely-chunky-smooth.  Dollop your slaw ontop of your salad and top with grated carrot and more chopped green onions.

Quick-Poached Eggs Over Toast

My idea of a perfect brunch: this is savory, fast and packed with both fiber and protein. Plus, if you add it up, the calories come to about 250. Not too shabby eh?

One of my favorite new things I learned this year was how to quick-poach an egg. It's easier and faster than the traditional method, and yields an egg that is somewhat like a sunny-side up egg without all the frying.

Ingredients (each, per person):

1 egg
1 tbsp butter
1 slice of whole grain bread
salt and pepper to taste
1/4 cup spinach
Ice
cooking spray

To quick-poach:

Toast and butter your bread.

Spray a stainless steel skillet with cooking spray and set on medium heat. Break your egg into the pan, being careful not to break the yolk. Cook until the bottom of the whites are set (so it won't slide around or break up anymore) and then add in a handful of ice cubes. Cover and cook until the white part over the yolk just sets, about 3 minutes. Remove from heat.

Top the toast with spinach, then the egg, then salt and pepper to taste.

10 minute Polenta with Tomatoes, Spinach and Olives


Super quick, easy and tasty meal! I discovered polenta some years back, and have served it this way ever since. You can find it in the pantry aisle in a litte tube like this:


Slice it 1/4 inch thick and bake on an oiled pan at 400 degrees for 10 minutes.

Meanwhile, open 1 can stewed tomatoes and simmer until dark red.

Top the polenta slices with fresh spinach, stewed tomatoes, kalamata olives and Parmesan. See how easy that was? Less than 6 ingredients and 10 minutes and you've got dinner.

Spinach and Potato Frittata

It's a rainy Veteran's Day out here on the California coast, and what better for brunch than a savory frittata and a cup of hot coffee? My husband's got music playing and my kids are debating on whether this should be considered a breakfast or a lunch...hence: brunch.



Ingredients:

1 onion, chopped
2 large red potatoes, diced and boiled until barely soft
1 6 oz. bag of fresh baby spinach
4 whole eggs
4 egg whites
1 tsp dried Italian seasoning
1/3 cup of vegetable broth
1 tsp salt
1/2 tsp pepper
1/2 cup of shredded cheese of your choice
sprinkling each of bread crumbs and parmesan cheese

Preheat oven to 350.

Saute the onion until soft, then set aside.

Saute the spinach until wilted, doing in two batches if necessary and set aside.

In a large bowl, combine the eggs, whites, broth, seasoning, salt and pepper, whisk until blended. Then fold in the onion, potato and spinach.

Pour into a greased pie pan and top with cheeses and bread crumbs. Bake for 25-30 minutes, or until middle is set and top is browned. Let cool 5 minutes before cutting and serve with sour cream and salsa.

Green Goddess Edamame Chili


Treat yourself to a big bowl of green goodness! I was a little worried this recipe would be too spicy for my littles, but it came out quite mild.

Ingredients:

1 jar salsa verde (we were lucky to have some homemade in the freezer)
1/4 cup chopped green onions
3 cloves of garlic, chopped
2 pasilla peppers, chopped
1 tbsp. of fresh minced ginger
5 stalks of celery, chopped
2 bags of shelled edamame
3 cups of vegetable broth
salt to taste
2 large handfuls of fresh spinach
1/2 cup chopped fresh cilantro
avocado and lime, for garnish

Saute the green onion, garlic, celery, ginger and peppers until soft, about 3 minutes.  Add in broth and salsa verde and simmer for about 10 minutes. Remove from heat, stir in spinach and cilantro until wilted. Spoon chili over cooked brown rice. Top with avocado and a squeeze of lime.

Stuffed Marinated Mushrooms

A little ingenuity and some left over brown rice = sublime happiness!

Ingredients:

8 baby bella mushrooms, stems removed
1/2 cup teriyaki sauce
1-2 cups cooked, cold brown rice
a handful of spinach, chopped
2 cloves garlic, chopped
1 tbsp olive oil
salt and pepper to taste
1/4 cup shaved parmesan

Place mushrooms in a bowl and marinate in teriyaki for a few hours (make sure to get some marinade in the gills of the mushroom for maximum flavor).

Preheat oven to 375 degrees.

When ready, place your drained mushrooms into a baking dish.

In a bowl, mix rice, spinach, garlic, oil, salt and pepper and parmesan. Spoon into mushrooms and bake for 20 minutes. Let cool a few minutes before serving.

Chik'n and Rice Soup


This is a very simple and savory soup that is easy to make and so nourishing. My husband, the resident meat eater, whipped this up tonight and it was a big hit for vegetarians and meaties alike.
Chik'n and Rice Soup
1 cup cooked brown rice
1 32 oz. box vegetable broth
2 stalks celery, chopped
1 onion, chopped
3 cloves garlic
2 carrots, chopped
2 sprigs fresh thyme
3 bay leaves
1 package extra firm tofu, drained and chopped
salt and pepper to taste
Saute onion, celery, garlic and carrot in a few tbsp olive oil until softened, about 5 minutes. Add the broth, thyme, bay, salt and pepper and simmer for about 20 minutes. Just before serving, add in cubed tofu and cooked rice. To serve: place 1/4 cup of roughly chopped fresh spinach into each bowl and top with soup.
